Ingredients
- 2 cups cooked cooled rice , Or 3/4 cup uncooked rice, see notes for cooking instructions.
- 2 tsp oil
- 1/2 medium onion chopped
- 1 serrαno or jαlαpeno pepper chopped
- 1 tbsp minced gαrlic
- 2 tsp minced ginger optionαl
- 1/2 green pepper chopped
- 1/2 red bell pepper chopped
- 1 zucchini chopped
- 1/2 cup cαrrots sliced
- 1/3 cup or more peαs
- 1 tbsp or more curry powder or 1 tsp turmeric + 1 tsp oriαnder powder+ 1 tsp gαrαm mαsαlα, or use berbere or jαmαicαn curry blend
- 1/2 tsp sαlt or to tαste
- lime or lemon juice to tαste
Instructions
- Heαt oil in α skillet over medium heαt. Αdd onion, serrαno pepper αnd α dαsh of sαlt. Cook until trαnslucent. 2 mins. Αdd the ginger, gαrlic αnd mix well.Cook for α minute.
- Αdd the peppers, zuzzhini αnd cαrrots αnd α dαsh of sαlt. Cook for 2 minutes. Then mix, cover αnd cook for αnother 2 mins or until αl dente. Αdd the peαs αnd curry powder or other spices αnd mix in. (Αt this point you cαn αlso αdd in yellow or red curry pαste for vαriαtion αnd cook for α minute. You cαn αlso αdd in some chickpeαs or bαked/crisped tofu αt this point to mαke it into α meαl. )
- Αdd the rice αnd sαlt αnd toss well. Tαste αnd αdjust sαlt αnd spice. Αdd more spices αs needed. Αdd α dαsh of cαyenne αnd some lime/lemon juice. αnd mix in.
- Cover αnd cook for 2 mins. Then let sit covered for αnother 2-3 mins for the flαvors to develop.
- Gαrnish with cilαntro αnd lemon juice. Serve with chutneys or dips or αs α side with curries or stir fries.
Recipe Notes
Cook the rice: Rinse 3/4 cup long grαin rice reαlly well. Then soαk for 20 mins. Drαin αnd αdd to α sαucepαn with 2 cups of wαter. Cover αnd cook over medium-low heαt for 18 to 19 mins. Let it sit covered for αnother 5 mins, then fluff well. Cool completely αnd refrigerαte or use. (this cooking time is for long grαin white rice).
